Laurent Lignier and his father Hubert manage 9 hectares under vines mainly in the communes of Morey Saint Denis and Gevrey Chambertin.
The viticulture has been done for over 25 years without the use of weed killers or chemical insecticides. Domaine Hubert Lignier’s “climats” and great terroirs’ soils are firmly preserved through respect to nature and support of the natural development of microorganisms in the soil. Laurent and Hubert believe that this is the key to the balance of the vine’s growth. Since 2011, the domaine employs the use of organic protective treatments.
For vinification and ageing, the domaine uses traditional and natural methods. They believe that the fruit’s quality is essential to craft better wines. The fruit arriving at the Cuverié is meticulously sorted manually before it is transferred to the fermentation vats. Each one of the various terroirs from Bourgogne to the Grand Crus is equally respected and is transparent in the wine originating from it. The use of new oak is minimal and the wines are aged in barrels on its lees for a relatively long period of time (between 20-22 months). No racking is done after the completion of the malolactic fermentation and the wines are bottled by gravity only, without fining – for the preservation of freshness and to support their ageing potential.
The resulting wines are fresh, fine and elegant, and are a pleasure to be tasted from barrel to bottle. The wines have long ageing potential.
