Olivier Lamy's meticulous and thoughtful viticulture is a source of inspiration for other vignerons up and down the Côte: whether it's his high-density plantings, his practice of rolling canopies rather than hedging them, or his almost manic worth ethic, where Lamy is leading, others will surely follow. In the winery, more foulage and longer press cycles are the order of the day, capturing more structuring—and refreshing—dry extract. Long élevage in barrels and demi-muids follows...In short, this is one of the two or three finest sources of white Burgundy on the Côte de Beaune, and readers are warmly encouraged to acquaint themselves with these serious, thought-provoking wines.

An exuberantly fresh nose mixes notes of citrus and green apple with hints of mineral reduction and anise. The nicely energetic and beautifully well-detailed flavors conclude in a chiseled, refreshing, indeed even bracing, finish that is supported by lemon rind-tinged acidity. A quality Bourgogne. The 2018 Saint-Aubin La Princée is showing well, opening in the glass with aromas of citrus zest, white flowers and crisp Anjou pear. Medium to full-bodied, elegantly textural and precise, it's saline and incisive, Lamy observing that some two-thirds of this parcel is decidedly cool and windy.

This too is overtly floral in character with plenty of citrus influences to the pear, apple and softly spicy aromas. The richer and solidly concentrated medium weight flavors exude a subtle bead of minerality that adds a sense of lift on the clean, dry and youthfully austere finale. The 2018 Saint-Aubin 1er Cru Clos de la Chatenière bursts with aromas of waxy citrus rind, yellow orchard fruit, clear honey and wheat toast. Medium to full-bodied, round and textural, it's layered and enveloping, with fine concentration and a long, saline finish. Lamy notes that his old vines in this lieu-dit (which is warmer than, for example, Derrière chez Edouard) tend to produce lots of small, shot berries.

An attractively layered and ever-so-slightly exotic nose features notes of citrus, apple and white peach and plenty of floral influences. There is enough reduction present to completely mask the fruit. By contrast there is excellent verve and freshness to the big, bold and relatively powerful flavors that brim with both minerality and an abundance of sappy dry extract before culminating in a focused and strikingly long finale.
