Didier Dagueneau once voiced his concerns regarding the prevalent culture of apathy and opportunism in the Loire Valley wine region. This perspective had a profound impact on the young grower, Jonathan Pabiot, who was schooled with Dagueneau's son. Pabiot was influenced by Dagueneau's non-conformist attitude and ultimately decided to abandon his studies at a viticultural school, choosing instead to work under the guidance of Didier Barral before returning to his family's Pouilly-Fume Domaine. Jonathan Pabiot turned to organic farming and whilst this was initially rejected by his father Didier, by 2010, the father and son had joined forces to create Domaine Jonathan Didier Pabiot, the first biodynamically certified producer in Pouilly-Fume. The Domaine has vineyards across the Pouilly-Fume region, with soils ranging from Kimmeridgian marl to silex. The vines average 30 years old, and yields are low. In the cellar, he avoids added yeasts and enzymes, relying on native yeasts and low-temperature fermentations.

"Sold as Prélude until the 2020 vintage, the 2021 Pouilly Fumé Élisa offers an intense, beautifully clear, fresh and spring-like vegetal and crisp as well as spicy but substantial bouquet with leafy and green asparagus aromas. Based on four- to 12-year-old vines, this is a pure, fresh and saline but also stunningly rich and intense Pouilly with this gorgeous leafy and phenolic freshness and bite that I haven't detected in the Sancerrois for some years. The finish is refreshing and structural and very stimulating."

"The former Florilège comes with a new name this year. Predominantly from limestone soils but also silex, the 2020 Pouilly Fumé Léon offers a clear, deep, fresh and spicy, quite complex and iodine bouquet with great precision and mineral intensity. Aged in stainless steel, concrete and 20% oak barrels (228 and 500 liter), this is a rich and round, very elegant and aromatic Pouilly-Fumé with good mineral and fruity freshness and a long, intense and tensioned finish that reveals fine tannins and crisp grip. This is a substantial wine with excellent aging potential."

The Boulay family, with wine-growing roots dating back to 1380, produces remarkable wines in Sancerre through the work of Gérard Boulay, the current caretaker. He is focused, intense, and humble, respecting the terroir by avoiding lazy viticulture and industrial winemaking. Boulay works mainly with old vines, grown through massale selection on quality rootstock at a higher density than most Sancerre vineyards. He practices organic viticulture and in the cellar, uses wild ferments, old oak, and minimal sulphur during élevage. The wines are considered some of the finest whites of France, with comparisons being made to Chablis and the Cote de Beaune.

2021 Sancerre 'a Chavignol'

"The 2021 Chavignol is a tender and rounded style, surprisingly so compared with a lot of other 2021 Sancerres that are racy rather than ripe. But that's what the Boulay family is looking for in its wine - ripeness not acidity. It offers clean, unmessed with Sancerre fruit - all elderflower, pineapple and citrus. A wild fermentation in tank with around eight months ageing gives a light leesy character, providing interest beyond the fruit. Well balanced and could be enjoyed now to eight years."

2021 Sancerre 'Clos Beaujeu'

"The 2021 Sancerre is a rich and impressive style that's full of nectarine fruit. Vinified in barrel, there's a roundness to Sauvignon's normally angular edge and a hint of sweetness although Boulay insists it is fully dry. The white limestone soils provide the tender texture, but there's a real sense of structural grip on the long finish. Delicious now but based on historic examples, will be even better in 10 years."
