"Claude Maréchal is a winemaker who most people have not heard about, especially outside France despite his estate being rated at the same level as Dujac, Carillon, d’Angerville, Ponsot and Sauzet in France’s most respected wine guide - La Revue du Vin de France...

His principles in the vineyards are straightforward: the vineyards are ploughed, no herbicides are used, treatments are kept to a minimum and the pruning is severe to keep yields low. Vinification takes place in open wooden vats, all grapes are totally destemmed (à la Jayer), and fermentation is not induced by adding cultured yeast, so it can take a few days to start (a "natural" cold pre-maceration) using it's own. New barrels are added every year for maturation, but their proportion stays very low in order to produce wines where fruit dominates. It is important to stress that there is no recipe here. Winemaking follows a general theme, but techniques may be changed from year to year to suit the conditions of the vintage."

Not only does he excite us with the outstanding quality of his wines, but David Croix also reminds us just how great the wines of Beaune can be—and not before time! For aeons, the wines of this village have been wholly underappreciated in the world of Burgundy, thanks to the area being dominated by larger negociants and the Hospices de Beaune. Indeed, as Croix points out, although the appellation spans 42 Crus, you would be hard-pressed to find more than a handful of grower-producers bottling their own wine (and even then, a number of these are generic blends). David Croix has made it his mission to return the best terroirs of Beaune to their former glory, adding neighbouring Corton (red and white) as his Grand Crus. With the beguiling red and white wines he’s now crafting, the Burgundy world is starting to appreciate the vision of this outstanding grower and winemaker."

2020 Saint-Romain 'Combe Bazin'

"In terms of the winemaking, there was a light crushing, followed by a gentle, three-hour press and the wine was then fermented (wild) and aged in used 500-litre barrels, for one year on lees. There were another six months in tank before the wine was bottled. Croix notes that the archetypal Combe Bazin is a Saint-Romain that “fills out the palate”, and this is exactly what you get here; generosity balanced with juicy freshness from the terroir’s shallow, limestone soils and high altitude. It’s ready to enjoy now, but it will be at its best in another few years."
