Ultra-Precise Chablis of Bernard Defaix

"Founded in 1959 with a mere two hectares, today the Domaine Bernard Defaix consists of fully 27 hectares (certified organic since 2009) whose fruit is supplemented with purchased grapes. Much of the production is fermented and matured in stainless steel, though the Chablis Vieilles Vignes and several of the premiers crus, as well as the Grand Cru Bougros and Vaudésir, see varying percentages of wood, the bulk of it used.

The wines are lively and incisive, with good depth and concentration."

"Screwcap. Certified organic. Defaix’s Chablis Villages is drawn from four parcels of mature, 30-plus-year-old vines situated around Milly and Poinchy, on the left bank of the Serein River. The wine was fermented wild and aged on fine lees for 10 months in glass-lined tanks."

"The hallmark citrus aromas of a fine Côte de Léchet are present on the nose of quinine, oyster shell and poached apple scents. There is fine volume to the delicious medium-bodied flavors that flash ample minerality on the saline, youthfully austere and focused finale. Lovely."

"Moderate wood frames slightly riper if otherwise similar to the regular cuvée. As is usually the case, there is both more volume and mid-palate density to the caressing but punchy and powerful flavors that coat the palate on the impressively persistent finish. This beauty will need at least some forbearance to arrive at its peak."

"Didier Defaix tells us he has worked with the same grower family for twenty years and although the vineyards are not organically certified, the grower ‘works like us’, (that is to say he’s very happy with the quality he receives). The Montée de Tonnerre is drawn from old vines in Chapelot, which form 20 hectares of the vineyard on a similar southeast-facing aspect to the neighbouring Grand Crus. The vineyard’s iconic grower is, of course, Raveneau, although Moreau-Naudet, Billaud-Simon and others all farm vines in this prestigious lieu-dit. This cuvée is fermented wild, entirely in used barrels (one to five years old) with regular bâttonage. The wine is bottled after 12 months."

"A restrained nose reluctantly offers up aromas of green fruit, citrus and moderate Chablis character. The dense, broad-shouldered and powerful big-bodied flavors possess fine mid-palate density while exhibiting excellent length on the youthfully austere, moderately rustic and built-to-age finale. Patience suggested."
