Seiichi Saito studied oenology in Beaune but was not supposed to stay in Burgundy. However, after realising a passion for winemaking, he decided to permanently emigrate from Japan in 2008. Since then Saito has chalked up a very impressive resume, including stints at Domaine Rousseau, Simon Bize, Domaine Leflaive and Jacques-Frederic Mugnier before founding his own micro-negociant venture, Maison Petit-Roy. The experience at these venerable addresses, in addition to his innate talent for winemaking and viticulture, has well and truly set him on a course for greatness. His hallmark is exceptionally refined and perfumed wines that possess potent drive and tension. 2021 Bourgogne Aligote
Extremely Limited $85

"From two parcels in Savigny-lès-Beaune (clay and marl) and Échevronne (clay and limestone). Aged in used barrels (228L & 500L) on fine lees for 12 months, then settled in tank for 8 months. Not fined or filtered. Minimal SO2.

Fresh nose with sliced apple and lime zest. Tightly wound so give it some air. Apple blossom and lemon barley emerge as it warms up. Spritely palate - zippy with beautiful high acidity that lingers. Green apple, lime, and a mineral core. Fresh and perky with plenty of drive and tension. Long ageing on lees gives a roundness to the wine, which becomes more apparent after the bottle has been open for a while."

2021 Cote de Beaune 'Les Mosnieres' Blanc
Extremely Limited $125

"Chardonnay from a 0.34ha plot in the Côte de Beaune. These vines are 20 years old, grown on soils with very high limestone content. Aged in used barrels (228L) for 12 months on fine lees, then left to settle in tank for 8 months. Not filtered. Minimal SO2.

Fresh and airy with aromas of spring blossoms, rockmelon, white peach and hints of croissant. Again, high acidity like the Aligoté. Pure bright fruits with precision and tension. More drive than texture this year. Nectarine, freshly sliced apples and lemon. Becomes quite juicy with air, still has incredible tension and a long, mouthwatering finish."

2021 Bourgogne Hautes-Cote de Beaune Rouge
Extremely Limited $105

"Pinot Noir from a 0.8ha plot in Nantoux, near Pommard. Planted in 1982, he loves this vineyard as it looks like paradise! Lots of hard limestone here. 3 day cold soak and then 3-4 week whole bunch maceration. Aged in used barrels for 12 months, then left to settle in tank for 8 months. Not fined or filtered. Minimal SO2.

Amazing fragrant perfume that becomes quite intoxicating after a while. Pungent crushed strawberry, cacao, star anise, milk chocolate and red roses. Salt in the back ground. Silky elegant palate, laced with fine-detailed red fruit and spice. Light, with a lovely mouthfeel and texture. A little savoury twist at the end rounds things out perfectly. Caught me off-guard this one!"

2021 Bourgogne Hautes-Cote de Nuits Rouge
Extremely Limited $119

"Pinot Noir grown on clay, limestone and marl soils, at high altitude. 3 day cold soak and then 3-4 week whole bunch maceration. Aged in used barrels for 12 months, then left to settle in tank for 8 months. Not fined or filtered. Minimal SO2.

Very clean and polished nose. Sappy stems, tea leaves, plum, black cardamom, blackberry, black pepper and a hint of tamarind – the perfume is elegant, complex and ultimately lifted. Black roses and salt come later on. The palate is long and tailored, perfectly curated and suave. A beautiful mix of fruit and savoury notes, followed by fine integrated black-tea like tannins. Satiny with full, but linear mid palate. Long in the mouth. A beautiful wine."

2021 Bourgogne Rouge 'Souvenir'
Extremely Limited $129

"Pinot Noir from Pommard – a combination of Les Lormes (planted 1992-98) and De Sousa (planted 1949) – these parcels were vinified separately in previous vintages. 3 day cold soak and then 3-4 week maceration (50% whole bunch, 50% de-stemmed). Aged in used barrels for 12 months, and then settled in tank for 3 months. Not fined or filtered. Minimal SO2.

Fragrant perfume that is so enticing. Red fruits, red berries and roses. Black tea and a little sappy savoury note. Palate is the same – very light, with strawberries and red cherries. Fine and delicate but with just enough weight. More of that linear profile that is apparent across the 21's. Sweet red berries, and that sappy note in the mid palate. Fine black tea tannins add a nice bitterness to the finish. Summer or lunch wine. A little too easy to drink!"

2021 Monthelie 'Les Crays'
Extremely Limited $129

"Pinot Noir from a 0.18ha plot of 25 year old vines, grown on clay and limestone. 3 day cold soak and then 3-4 week whole bunch maceration. Aged in used barrels for 12 months, then left to settle in tank for 3 months. Not fined or filtered. Minimal SO2.

Very light colour. Pure strawberry perfume with integrated cinnamon, roses and cocoa dust. Lovely notes of salt in the background. Light, but has quite intense red fruits and spice. Heavenly. Texture is dreamy and smooth – linear but filled at the seams. Completely resolved tannins. Refined, salty length. Another red that suits daytime or warm weather. These are all great with a slight chill too."

2021 Savigny-les-Beaune
Extremely Limited $141

"From a 0.16ha plot called ‘Les Vermots’. The vines grow on clay and limestone and were planted in 1929. It’s a cooler climate with excellent drainage. 3 day cold soak and then 3-4 week whole bunch maceration. Aged in used barrels for 12 months, then left to settle in tank for 8 months. Not fined or filtered. Minimal SO2.

A huge contrast to the 2020, which was quite powerful and still needs time. This is open and fragrant straight off the bat. Red roses, cinnamon, salt, clove, star anise, fennel pollen. Behind that is cherry, but this is more about a beautiful spice perfume, A little chocolate too. Lithe, creamy, light, dreamy and full of life on the palate. A mix of choc, strawberry and raspberry fruit. Almost weightless compared to the dense 2020. Smooth and sensual, with a creamy texture that is deep but light. New layers unfold with hints of dehydrated blood orange and cherry skin. This is really special. Perfume is immense! Tannins are fully integrated already. What a wine!"
