Sailor Seeks Horse
"We have here a new star in the making..."

For Gilli and Paul Lipscombe, the goal has always been to craft the finest Pinot Noir and Chardonnay in Australia. After their first vintage in 2013 was released to critical acclaim, the couple's drive and talent became overwhelmingly apparent. Gilli and Paul have now successfully completed over 10 vintages at their small vineyard in the Huon Valley. As each year passes, Campbell Mattinson's quote above about them being stars in the making seems increasingly redundant. For us, they have undeniably achieved star status.
Those who have had the pleasure of tasting their previous vintages can attest to the exquisite quality, precision, and overall deliciousness of Sailor Seeks Horse wines. Bearing such scintillating minerality and depth, wines from Gilli and Paul are quickly becoming some of our favourites from Tasmania.

"2022 was a standout vintage for Chardonnay in the Huon Valley. Just the right combination of weather and yields to create wines of precision and balance. Our hallmark tends to be a slatey, briney, almost mineral-like palate weight which unites the three Chardonnays from 2022."

"Whole bunch pressed, 'hyperox' into press tray, 12 hour settle in tank, racked to 300L hogsheads, 20% new, wild ferment, no MLF, full lees 12 months' elevage in barrel, then 3 months in tank before bottling. Not fined. Mostly 277 and 95 clones with a little 96.
Citrus, stone fruit, slatey middle palate, touch of richness, spice, white pepper."

"Even though the 2022 season fell into another La Nina event, we had good rainfall early on and then, as seems normal these days, the tap was turned off in the new year. So we had a fairly pleasant, dry, if not particularly sunny summer with a return to more typical yields compared to 20/21/23. After the previous two years it was a relief to use a few more fermenters in the winery with the fruit tasting great and the end of the season finishing off ripening nicely.
As the wines developed in barrel we tasted some blends and discovered a combination of the three low-yielding Djon clones (115, 114 and 777) resulted in a higher-toned, more spice-driven wine with a slightly denser palate weight than our normal Pinot. We loved it and so decided to bottle it separately!"
