"“The Dhillon wines are quite liberating. We can see what theory is applied and a result, and try different things from our more consistent winemaking approaches for Bindi wines. The fruit comes in, we knock it into shape, it’s pretty exhilarating over agonising over the growing all year, and gets me out visiting people and their sites to learn too”. So says Michael Dhillon of the negociant wines from Bindi.
Pops from the glass – forest berries, rose water, alpine herbs, green olive. Yes thanks. The sinewy of fine, lithe tannin, dribbly juicy fruit finding tension and chomp from that silty swish. Medium weight, savoury yet fruity, floral and meaty, all of it kept in check by freshness of fruit and general sense of palate-resetting vibrancy. Delicious"
