"The Chablis Vieilles Vignes comes from the Domaine’s older vineyard parcels that have a minimum vine age of at least 35 years. In Late-November/Early-December the wine is racked into 2nd and 3rd use barrels for 12 months. The wine is then racked back into stainless steel for a further 6-8 months prior to bottling. No battonage."
