"Pinot Noir from the Domaines 2.47 acre vineyard in Fixin Entre Deux Velles. This is the Domaine’s largest holding and and is a walled vineyard or “clos”. Mid slope vines on heavy limestone soils with an average age of 45 years. Hand picked and de-stemmed to old concrete open fermenters, five day cold soak before a long slow fermentation. Pressed to tonneau of which 30% are new for an elevage of 18 months before bottling. In my opinion this is the Domaines Vin de Garde, powerful yet restrained, concentrated and long. This wine will easily see out a decade in the cellar."
