This release of Penfolds Bin 707 cabernet sauvignon was matured in 100 percent new American oak hogsheads, but the fruit is more than a match for it. It’s a stunning wine – and further evidence that Bin 707 has come of age. This is a far cry from the disappointing cabernets released under this label in the 1960s and 1970s.
Tremendous wine. I love the long, lingering, tannic power of this – it’s a super-thruster of a wine. Long and serious, blue-black in colour, rich in saturated blackcurrant-like flavour and boosted by flavours of licorice, mocha and chocolate.
