"Made from the Steels Creek Vineyard and grown by Simon Peirce, this vineyard was planted in 1981 and produces exceptional Cabernet Sauvignon and Cabernet Franc. The blend is 82% Cab Sav and 18% Cab Franc with 20% whole bunches included in the ferment. It's fermented with wild yeast and had 18 months in old French oak barriques.
This variety is one that the Valley used to be widely recognised for and I’ve been wanting to bring it to life for some time... Its inky red colour sets the stage for something special. Aromas of classic blackcurrant, cassis, tobacco leaf and cedar. The fruit is rich and lifted. The palate is dense but soft and playful, not at all tannic or over-oaked. It’s a really beautiful, elegant, and classic Yarra cabernet. Do yourself a favour and buy some even if you’re not normally a Cabernet drinker."
