"The 2020 Savagnin Cuvée du Professeur is slightly different, as it matured in a 4,500-liter Alsatian foudre from Zind-Humbrecht with full lees and no bâtonnage. The wine comes from one of the best terroirs in Château Chalon, Sous-Roche, a very iconic place where you also have a picturesque view of the rock. It's very clean and elegant, with some spiciness (it gets into the wine, no matter how often you top up, François told me), a little curry, licorice and aromatic herbs. It has a moderate 12.5% alcohol, with great freshness and a very tasty, salty finish. Superb again."
